History
In 1990, Edward P. Grace III founded the original Capital Grille in Providence, Rhode Island. Despite its curious beginnings – the upscale restaurant opened in a rundown part of town and amidst a recession – it became successful because of the patronage of the political and business elite in the area. Grace also operated another chain of restaurants, Bugaboo Creek Steak House, Inc., which also managed the original Capital Grille. With the effective and efficient management, the Capital Grille chain experienced impressive growth especially with the credit lines extended for its expansion plans. In 1994, Bugaboo changed its name to RARE Hospital International, Inc. and started trading its shares. In 2007, Darden Restaurants acquired the Capital Grille chain (i.e., as part of its RARE acquisition) and, from hereon, the latter became part of the former’s Specialty Restaurant Group.
What They’re Famous For
As an upscale steakhouse, the Capital Grille chain has distinguished itself through the world-class quality of its steaks – juicy, succulent and tender due to the meticulous on-premises, 18-day dry aging process and exacting hand-cutting standards, which results in incomparable flavor, texture and tenderness with every bite. Even the Mini Tenderloin Sandwiches, which feature premium steak slices and caramelized onions, is a combo with to-die for flavors. You should also order either the steak or lobster for your main dish as well as a lobster mac and cheese for your side dish.
Why Eat Here

You will love the large wine and champagne selection.
- Simple menu that makes it easier to make your choices. You will appreciate the large food portions, too, so bring a date.
- Attentive waiters who obviously know their job from finding your preferred seat to recommending the best dishes and desserts.
