History
On 16 April 1982, Mike Young and John Zapp opened their first Chuy’s restaurant in an old Texas Barbecue Joint in Austin, Texas. Their vision: A funky and fun restaurant with authentic Tex-Mex dishes and desserts made from fresh and natural ingredients, as well as an ambiance that appeals to everyone. From its humble beginnings – 60 seats only with basic facilities – the chain has grown from a single restaurant to 15 locations in Texas in the late 2000s, followed by the first restaurant outside of Texas in Nashville, Tennessee in November 2009. Since then, it has brought its unique vision of Tex-Mex cuisine to Americans with more locations.
What They’re Famous For
Chuy’s restaurants are known for their classic Tex-Mex cuisine with a contemporary twist. You can order from a large selection of enchiladas, quesadillas, nachos, and tacos, among others, which are characterized by combinations of flavors inspired by the cuisines of New Mexico, South Texas, the Rio Grande Valley, and Mexico. For example, its famous Green Chile sauce recipe was inspired by a hole-in-the-wall diner in New Mexico while its fajita marinade comes from a South Texan’s family recipe. You will also love the special events hosted or sponsored by Chuy’s, such as Elvis Birthday Bash, Green Chile Festival, and Hot to Trot 5K, among other community events.
Why Eat Here
Chuy’s restaurants can be a joy to visit as regularly as your budget allows for the following reasons:
- Affordable Chuy’s prices especially during the Happy Hour that, on weekdays, stretches from 4 to 7 P.M. You can enjoy generous discounts as well as drink specials and chips, queso, and ground beef.
- Vegan and vegetarian options, such as the Boom Boom sauce, a spicy vegetarian version of your favorite queso.
- Several varieties of salsas and sauces in various flavors and spiciness. You can pair these dips with the enchiladas, tacos and burritos according to your preference – just be sure to tell your server about it.
- Helpful wait staff who will inform diners about the spiciness of certain dishes and dips. You may not want the green chili sauce, for example, since it is spicier than the others.
- Casual atmosphere conducive to winding down after a stressful day at work or for handing out with your family and friends.
